      <image:caption>Smoky pancetta in a spicy red wine &amp; tomato sauce. What’s not to love. This is a super quick 30 minute meal that kids will love. It’s like a hug in a bowl. Perfect for those winter evenings where you just want a hearty bowl of pasta with cheese. You could obviously use bacon bits, if you can’t find pancetta and the red wine is optional, but it adds a lovely depth flavour. Ingredients Serves 4 | 660 calories per serving* 400g pasta 2 cloves garlic, minced 1 small onion, finely diced 1 tsp chilli flakes 50ml red wine 100g pancetta 1 tbsp olive oil 400g tin of good quality chopped tomato handful fresh basil, torn 25g parmesan cheese, grated Salt &amp; pepper, to taste Method Cook pasta according to packet instructions in a pot of heavily salted water. In a skillet sauté your onion in your olive oil until soft. Add your pancetta and cook until starting to lightly brown the base of the pan. Once bacon starting to brown, add your garlic and cook for a minute or 2, stirring regularly so that it doesn’t brown. Add your wine to de-glaze the pan. Scrape all the bits from the bottom of the pan to bring the flavours back into your sauce. Simmer for a minute or 2. Add your tomatoes and most of the fresh basil. Season lightly with salt (as bacon is salty) and a good pinch of black pepper and chilli flakes. Simmer for about 10mins. Before you strain your pasta, add a ladle of the starchy pasta water to your sauce and stir in your strained pasta. Serve with a sprinkle of fresh basil and some grated parmesan cheese on top.</image:caption>

      <image:caption>Who doesn’t love spaghetti and meatballs? I don’t know what it is about this dinner but I just find it way more exciting than spaghetti bolognese, even though it’s very similar ingredients. This is a really kid friendly meal as I have blended the sauce and snuck in some veggies. This is also perfect for meal prep, as this amount yields about 6-8 servings (depending on how many meatballs you want to eat!). This recipe can be made dairy free if you leave out the parmesan cheese. This recipe does contain egg. Ingredients Total estimated calories for 3 meatballs and 100g pasta serving = 635* For 20 large meatballs 6-8 servings | 75 calories per meatball** 800g extra lean mince 1 clove garlic 1 cup panko breadcrumbs 2 tsp oregano 2 tsp dried rosemary 50g grated parmesan cheese 1 egg salt &amp; pepper 4-5 tbsp olive oil For Sauce Serves 6-8 | 50 calories per serving based on 6 person portion* 1 onion, finely diced 3 cloves garlic 1 large carrot, finely diced 1 red chilli, finely chopped 3 tbsp tomato pureé 2 400g tins chopped tomato 2 tsp sugar or balsamic vinegar salt &amp; pepper some fresh basil (optional) 1 tbsp olive oil Method To make the sauce, sauteé the garlic, carrot, onion &amp; chilli until onion is softened. Add in your basil (if using), tomato pureé, tins of tomatoes and season well with salt &amp; pepper. Simmer together for about 15minutes. To make the meatballs add all your ingredients, except for the oil into a large bowl and combine using your hands. Using a tbsp amount of meat mixture roll into balls in your hands and set aside until all the mince mixture is used up. I got 20 large meatballs out of this amount, but you could make them smaller or bigger, depending on how you like them. In a large pan or skillet, heat the oil and add your meatballs. Cook until browned all over (takes about 10-15minutes). Once browned place meatballs on a plate with some kitchen paper and blot off any excess oil. Cook spaghetti (or any pasta of choice) according to packet instructions. I cook 100g pasta per person (roughly 350 calories if using dried white pasta). By now your sauce should be ready to blend. I use a hand blender. When pasta is cooked, stir in your sauce and meatballs. Grate some extra parmesan on top. *Calories calculated using my fitness pal may not be entirely accurate and should be used as a rough estimate for caloric value of meal.       <image:caption>Creamy and indulgent this is a veggie dish to leave you feeling moreish. Who doesn’t like a big bowl of creamy, tomato pasta with loads of grated cheese and herbs. It’s comfort food in a bowl, but since we aren’t using cream it’s light and summery, the perfect meal to eat outside with a glass of wine. You could easily make this vegan / dairy free by leaving out the parmesan and mascarpone. It just won’t be as creamy but you could sub in whatever dairy-free alternative you like. Nutritional yeast would give this a lovely cheesy taste too. Ingredients Serves 4 | 705 calories per serving** For pesto 125g sundried tomatoes 100ml olive oil (I used the oil from the jar of sundried tomatoes) 6-8 cloves of garlic small handful of fresh basil &amp; parsley salt &amp; pepper Juice 1/2 lemon 25g toasted flaked almonds (could also use pine seeds/walnuts) 30g grated parmesan cheese For sauce 500g pasta of choice 1 tbsp butter (or olive oil) 2 cloves garlic, thinly sliced handful olives, sliced 3 heaped tbsp sundried tomato pesto 2 tbsp tomato pureé 2 tbsp mascarpone 2 ladles of starchy pasta water handful chopped basil &amp; parsley 20g parmesan cheese (optional to serve) Method Heavily salt a large pot of boiling water and cook pasta according to packet instructions (if using fresh pasta, you can wait until the end to cook it but I used dried so it took about 10mins). Blitz all your ingredients for your sundried tomato pesto in a food processor. You won’t need all this pesto for the recipe but it will keep in the fridge for a week. Set aside once blended. In a large skillet melt your butter or oil and add your olives (or any veg you like) and garlic. Cook for 2-3 mins on a low-medium until garlic is starting to brown. Add your tomato pureé &amp; 3 heaped tbsp of sundried tomato pesto. Cook this until the oil begins to separate from the pesto. Then add your mascarpone cheese. The sauce will be very thick, but don’t be alarmed. Turn down the heat and add 2 ladles of your pasta water and stir it into the sauce. Your sauce should be smooth and silky. Add your fresh herbs and some parmesan at this point. Strain your pasta and add it to the sauce and serve together. Sprinkle with some extra cheese and herbs if you like. ***Calories calculated using my fitness pal and may not be entirely accurate but should serve as a general guide of caloric value of the meal</image:caption>

      <image:caption>This is the ultimate dinner with a nice chilled glass of white and a movie. Nicely spiced and loaded with flavour from the roasted garlic &amp; tomatoes. It’s well worth taking the extra time to roast the garlic &amp; tomatoes as it makes the really sweet and jammy. So don’t worry about your entire dinner tasting of garlic. Roasting them really softens the flavour. You could serve this with any pasta you like, I personally love linguine or spaghetti. This doesn’t reheat well, so definitely eat it fresh as that is when it tastes it’s absolute best!</image:caption>

      <image:caption>Breaded chicken AND pasta combined is a match made in heaven. This pasta sauce is delicious on it’s own without the chicken, as a lovely vegetarian meal in itself, but to beef this up a little breaded chicken adds a really nice touch. The trick is to slow cook the sauce down so it’s thick and coats the pasta and the black olives add a lovely saltiness to the sauce. I didn’t have any fresh basil to hand the day that I took these photos, but I usually sprinkle some fresh basil on top before I serve this up. I shallow fried the chicken for this, but you could definitely use the airfryer too or the oven.</image:caption>

      <image:caption>This dish is actually Tagliatelle alla Norcina, but I knew nobody would know what that actually meant so I created my own no-explanation needed name. This dish is traditionally from the Umbria region in southern Italy, famous for it’s pork meats and truffles. This dish is traditionally served with a tube like pasta such as a rigatoni pasta, but I love how the silky creamy sauce coats the tagliatelle too. I couldn’t find Norcia sausage in Ireland, so using high quality local pork sausage is essential. I wanted to sneak in some veggies into this dish too, so I added a packet of chestnut mushroom (ideally, I would have had a variety of mushroom such as porcini, chanterelles &amp; chestnut). Truffle is hard to get in regular supermarkets but I highly recommend purchasing some online. I always associate eating truffle with eating out, as I always order truffle dishes in Italian restaurants, but since we are in a lockdown I decided to order some off Truffle Hunter on Amazon and was surprised at how reasonable they were. Obviously some varieties were much more expensive than others, but I kept it simple and ordered some Truffle Salt &amp; minced black truffles.</image:caption>

      <image:caption>With the winter fast approaching we all need a bowl of comfort food. This is a lovely Italian classic, rich and creamy, without the heavy cream. The sauce is emulsified from the starchy pasta water with egg &amp; cheese, making it must less heavy than the cream laden dish served up in many restaurants. This is pretty close to an “authentic” Italian carbonara. I find it pretty difficult to get pancetta where I live, so I substituted it for some bacon lardons. I also used linguine in this dish as I didn’t have spaghetti to hand. I like the thickness of the linguine and actually think it makes a great substitute. The key to this dish is seasoning, as there are so few ingredients so remember lots of black pepper, plenty of salt in your pasta water and generous amount of cheese as these are what lend flavour to the dish.       <image:caption>This sauce goes perfect with salmon, chicken, prawns - any protein you like really. However, I think it goes particularly well with salmon. The sauce is garlicky, salty and tangy, but a great one for non-spice lovers to enjoy, that still packs a lot of flavour. This is a great meal prep dinner as you can cook all of this in advance and keep it in the fridge for the week. This would also be great served on some noodles or a bed of stir fried veggies. Ingredients Serves 4 | 377 calories per serving (excluding rice) 400g salmon darnes 2tbsp sesame oil 2 tbsp olive oil 1 whole bulb of garlic, minced (about 10 cloves) Large thumb sized piece of ginger, minced 8 tbsp soy sauce 4 tbsp apple cider vinegar 2 tbsp oyster sauce 1 1/2 tbsp sugar 2 spring onion, thinly sliced Black pepper Lime, to garnish To serve (577 calories for entire meal with rice) 1 cup cooked basmati rice per person (about 200g) Red pepper, sliced and sauteéd Handful frozen peas, thawed and stirred through the rice Method In a pan, heat up your oil until very hot. While it’s heating mix all your ingredients for your sauce (soy, oyster, sugar &amp; vinegar) and mince your garlic &amp; ginger. When the pan is hot, add your salmon skin side down and cook for 3 minutes on each side. Season the pink side with pepper before flipping. You should get a nice golden colour on the top of your salmon. Remove it from the heat. Place your sauce into the same pan and stir when it begins to bubble. Re-add your salmon and baste your salmon in the sauce. Simmer for about 8-10 minutes, until the sauce has reduced/thickened. Serve with some steamed rice with some sauteéd veggies stirred through (I used peas &amp; pepper). Garnish with a sprinkle of chopped spring onion and a wedge of lime to squeeze over the top.</image:caption>

      <image:caption>Summer on a plate! Paella always reminds me of holidays. I usually add some chicken thighs to this dish but since I didn’t have any, I just added some extra seafood and am calling it a seafood paella. You could of course add chicken a few minutes before cooking the veg and chorizo and give the thighs a nice sear on either side before cooking the rest of the meat. The only essential flavour is the smoked paprika, so don’t skip this step as that’s what makes paella, in my opinion. Ingredients Serves 5 | Roughly 530 calories per portion* 350g paella rice 800-1.1L stock (I use chicken or vegetable) 250g seafood mix (I like smoked seafood) 50g chopped chorizo 2 tbsp olive oil 4 cloves fresh garlic, minced 50g frozen peas 12-15 jumboo prawns, deveined &amp; shells removed 1 red pepper, sliced 1 onion, finely diced 1 large carrot, finely diced 2 tsp smoked paprika 150g bacon bits (optional) few strands of saffron (optional) 2 tbsp tomato pureé Juice 1 lemon chopped fresh parsley, for garnish Method In a large skillet, heat the oil and add carrot, onion, garlic, chorizo &amp; bacon with the smoked paprika. Sauté for 5 mins. After 5 mins add your red pepper and cook on medium heat for another 5 mins or so. Add your tomato pureé and the rice until rice is evenly coated in all the flavours. Add 800ml of stock (I add my saffron strands to the stock as it gives a lovely colour, you could add a pinch of turmeric if you don’t have saffron). You will likely need more stock but you don’t want to add too much initially. Stir it all around then cover for about 10minutes, stirring occasionally. After 10minutes, assess to see if rice is a little crunchy and if so, add another 100ml stock along with your mixed seafood. Stir to spread throughout the paella and scrape any stuck bits of rice from the bottom of the pan. Cover for 5 mins. After 5 mins, add your peas and prawns and another 100ml of stock if needed. Add your lemon juice. Paella is ready once the prawns are pink. Serve immediately with some extra lemon wedges and a sprinkle of fresh parsley *Calories were inputted into my fitness pal and may not be entirely accurate but should serve as a general guide for nutritional value</image:caption>

Some of the ingredients are a bit wacky and things I’ve never heard of but I googled a few substitutes for things I had / knew I could get locally and it tasted really good. I’ve adapted the wagamama recipe with my tweaks here, using ingredients that are readily available. Be warned it is very spicy, but I love spice so wasn’t an issue for me, but definitely not for the faint-hearted. It’s packed full of fresh crunchy vegetables and doesn’t have that gloopy MSG texture, that you often can find with asian cooking. You will definitely get a few of your 5 a day by eating a portion of this. Can easily be made vegetarian / vegan by using tofu or quorn. I love it with prawns, but chicken would be lovely too.</image:caption>

While I wanted this to be an indulgent dish I did try to make it without using a load of butter and cream. The creaminess of this risotto is actually from low fat milk and 4 tbsp of low fat creme fraiche. So while it definitely is a rich and creamy dish, you won’t be left feeling sluggish afterwards, which usually happens to me when I eat anything with lots of heavy dairy such as butter, double cream etc. This risotto, per serving is less than 500 calories, so it’s delicious, filling and relatively low in calories. Win-win! The truffle is not an essential ingredient, but if you have it it really does make this dish stand out. I hope you enjoy!</image:caption>

The coconut adds a lovely nutty depth to these muffins. These are HUGE so they are sure to satisfy any sweet cravings. I find it best to mix these by hand as if using a mixer you can easily over-mix the batter and the muffins will be a bit flat. Ingredients Makes 12 | Roughly 385 calories per muffin* 150ml sunflower oil 150ml milk 1 egg 100g caster sugar 100g light brown sugar dash vanilla extract 300g self raising flour 150g white chocolate chips 150g frozen raspberries 50g desiccated coconut Method Preheat fan oven to 160 Celcius (or 180 conventional oven). Line a muffin tray with paper muffin cases. Set aside In a large bowl, add all the wet ingredients and whisk together. Add in your flour &amp; sugars and fold in using a spatula. Don’t overmix, just fold enough so that there are no lumps of flour. Add in your remaining ingredients and fold gently until nicely distributed. Bake for 30-32mins (if using fresh raspberries reduce the baking time by about 2-3 minutes as their will be less moisture in the mixture) *Calories calculated using my fitness pal may not be entirely accurate but should serve as a good guide for likely calorie density.</image:caption>

      <image:caption>An Easter classic. I love these nicely spiced cakes, toasted with some butter &amp; jam. I know some people hate raisins but you can absolutely sub in chocolate chips or orange zest / mixed peel instead. These are really light and fluffy inside. A lovely breakfast and even better as a bread &amp; butter pudding base! (Stay tuned recipe of that to follow)!! Ingredients Makes 12 225ml low fat milk 500g strong white flour 60g caster sugar 8g fast action yeast 1 tsp cinnamon 1/2 tsp ginger 1/2 tsp nutmeg zest 1 orange 50g butter (chilled &amp; cubed) 2 eggs 150g raisins 50g mixed peel 1 tbsp apricot jam (for glaze) 30g flour + 30ml water (for cross) Method Warm milk in microwave until warm. In a bowl rub your butter with flour using your fingertips to resemble breadcrumbs. Once consistency is reached add your remaining dry ingredients (spices, yeast &amp; sugar). Add in your warmed milk &amp; eggs and knead by hand (for about 10 mins) or in electric mixer with a dough hook for 5-7 minutes. Transfer dough to a lightly oiled bowl, cover with clingfilm and leave to prove in warm place such as hotpress. Leave to prove for 1 hr 30mins (or until doubled in size). Once risen place on floured surface and knock the air out for a minute or 2. Split your dough into 12 even sized balls (mine were 95g each). Add to a deep large pyrex dish (lightly oiled again). Space them out slightly in the dish as they will expand and touch each other. Leave to prove for another 40 mins, covering the dish with clingfilm. This recipe is really simple and the only trick is not to handle the dough too much or the mixture won’t rise in the oven. I know loads of people don’t like raisins so feel free to substitute these for chocolate chips or even leave them out completely and have them plain. These are best served warmed and freshly eaten within 2 days of cooking (if they last that long!). Ingredients Makes 5 | Roughly 278 calories per scone* 50g cold butter cubed 200g self raising flour 1 tsp baking powder 25g caster sugar 100ml low fat milk 50g raisins 1 egg beaten (or extra milk) for glazing Method Preheat oven to 180 Celcius and line a baking tray with greaseproof paper. In a large bowl rub the cold butter into the flour with your fingertips until they resemble fine breadcrumbs and there are no lumps of butter anymore. Stir in your sieved baking powder, sugar &amp; raisins. Add in your milk and stir until just combined (don’t overmix). Tip onto a flour work surface and roughly flatten so that you will have enough for 5 large scones. You will be tempted to cut these as soon as they are out of the oven but you need to leave them until completely cool (at least 5 hrs) before attempting to slice them, or you will be left with a runny gooey mess. Trust me though, they are worth the wait. Just because they are vegan, does not mean they are in any way healthy, but it’s nice to feel like that you can still make insanely delicious treats that are cruelty free. I ordered the filet mignon and it comes with either house salad or fries. They give complimentary olives &amp; bread to start. We ate on the outside terrace and it was beautiful and not too noisy. The staff were very friendly and the steak was cooked to perfection. The interior is very dark and cozy, a great date night spot. For 2 steak dinners with drinks, including tip our bill came to €70, so while potentially pricey for Spain, very reasonable by Dublin standards.</image:caption>

This is a recipe that a restaurant I used to work in, in Toronto, had on their menu, the “cavoletti salad”. Before I left, I asked one of the chefs how to make it and they told me the recipe. To tell you I used to detest sprouts would be an understatement, but we were made try everything on the menu unless we had allergies so I had to suck it up and eat some raw sprouts. I am now converted. You would honestly not realise that you are eating raw sprouts. Now, it is probably due to lots of bacon, cheese and dressing, but still, sprouts none the less. Please give this recipe a go, even if you hate sprouts, as I guarantee you will likely enjoy this. Shredding makes them lose the ‘sprout” texture and this is even better served with a grilled chicken breast on top or some steak. The perfect side for an Italian dinner, or a substantial lunch when served with some pan fried meat or fish.</image:caption>

This is sticky, salty and spicy, the perfect dish when you are craving a chinese but want to still make a nutritional and healthy meal. This soy garlic chicken would be great with some fried rice, boiled rice or any type of noodle. This dish has a nice kick to it but if you fancy it less spicy, leave out the siracha and chilli. This dish comes in at 260 calories per serving with lots of fresh veggies included. If you add a cup of boiled rice it adds an extra 200. I had mine with boiled rice with peas thrown in at the last few minutes of cooking. Full dinner in under 500 calories? Yes, please! Ingredients Serves 4 | 260 calories per serving (excluding rice)* 450g mini chicken fillets 50g breadcrumbs salt / pepper &amp; aromat to taste 1 tsp chilli flakes 1/2 tsp 5 spice 1 red pepper, sliced 1 onion, sliced 1 carrot grated 1 tbsp groundnut/sesame oil For sauce: 3 heaped tbsp honey 1/2 cup soy 1 tbsp siracha 2 tsp cornflour 4 tsp water 1/2 tsp 5 spice Garnish (optional) 1 thinly sliced red chilli tbsp sesame seeds Fresh coriander Method Heat air-fryer to 200 or oven. In a ziplock bag add your breadcrumbs and seasonings and add the fillets of chicken. Shake the bag until chicken is evenly coated in breadcrumbs Add your chicken to airfryer in an even layer and spray a few times with frylight. Cook for 20mins, turning halfway and spraying with more frylight on the other side. While chicken is cooking prepare your sauce by adding all ingredients to a small pot (except for the cornflour &amp; water). Heat on low until all ingredients are combined (about 3-4 mins). Turn off until rest of dinner is almost ready. Add your cornflour to water and stir to make a slurry. Set aside. Sauté your onion &amp; pepper in oil until softened slightly. Add your grated carrot and cook for another few minutes. You chicken should now be almost ready. Add your cornstarch slurry to your sauce and put back on the heat until the sauce is thickened. Add your cooked chicken to your sautéed veggies and the add half of your sauce (enough to coat the chicken nicely). Since this sauce is quite salty I keep the remaining sauce for the table and let people add more if they like. Garnish with some fresh coriander, chilli &amp; sesame seeds. I served this with some boiled rice and peas.</image:caption>

Everyone can dunk some bread in the sauce and the best part is when the croutons for dipping are used up, you can slice the bowl into chunks that are soaked in the lovely sauce. Literally nothing goes to waste with this meal. It’s creamy, salty and moreish. It looks very impressive, despite how easy it is to make. Ingredients For sharing (roughly 6-8 servings) total calories = 2585** 1 crusty loaf sourdough (or any bread with a good hard crust that won’t go soggy from the filling) 150g bacon lardons 2 cloves garlic handful fresh chives, finely chopped 250g tub mascarpone 50g blue cheese, crumbled (I like gorgonzola, roquefort or cashel blue) Freshly ground black pepper Method Fry off your bacon bits with minced garlic until desired crispiness, set aside. Preheat oven to 180 Celcius In a bowl mix your chopped chives, with the mascarpone, blue cheese, black pepper &amp; bacon bits. Stir together and it should be a thick paste like consistency. Take your loaf of sourdough and cut off the top. Using a sharp knife cut around the edge of the crust and scoop out the centre with your hand, so that the centre of the bread is hollow and like a bowl. Be careful to not cut through or scoop to the very bottom crust as the filling will fall through if bread isn’t crusty enough. Spoon your filling into the bread bowl and cut the top of the bread and centre into large crouton shapes. Bake at 180 until croutons are golden and sauce is bubbling inside the bread. Best served hot. When all your croutons are eaten and a lot of sauce has been used, cut the remaining bowl into 8ths and nothing goes to waste. **Calories based on my fitness pal may not be entirely accurate but should be used as a general guide for caloric density of the meal.</image:caption>

      <image:caption>Steamed filled asian dumplings are always my go-to starter when I got out for sushi. If gyozas are on any menu, I find it hard to resist. I love them all veggie, chicken, prawn or pork. However, if I had to pick one, it would be chicken. I never thought it would be possible to make these without a bamboo steamer but my Wagamama cookbook came to the rescue and pulled through with a version that you can steam on your regular pan. I made a few tweaks to the original chicken recipe but stuck to the Wagamama method for the actual making of the gyozas. I made about 40 gyozas with this amount of dough. I also made half one day and kept the other half of the dough wrapped in clingfilm in the fridge, and they tasted just as nice the next day. I am sure you could also prep these in advance and keep them in the fridge for up to 2 days until you were ready to cook them. If you can find gyoza skins ready made, I’m sure this would make the process a lot easier, but I haven’t personally seen any myself in rural Cavan where I live. Making from scratch was a little time consuming, but not difficult.</image:caption>

By roasting the garlic and cherry tomatoes you get a lovely natural sweetness that goes perfectly with a drizzle of honey. I also added a good bit of black pepper and some chilli flakes right before serving, as we are chilli fanatics in our house, but this is completely optional. We had this with some crusty ciabatta bread that was toasted, resembling crostini. This would also be lovely with some crudité vegetable such as carrots or red peppers for dipping in. Roasting peppers along with the tomatoes and garlic would also be delicious in this recipe.</image:caption>

      <image:caption>These are a lovely autumnal snack, with sticky tomato relish, crumbly black pudding and flaky pasty. What’s not to love? These are great as an easy lunch with a side salad or as part of finger food if you are entertaining. They look impressive and are super easy to make, thanks to pre-rolled puff pastry. Puff pastry is honestly one of my favourite food hacks as it is such a versatile kitchen staple for so many recipes. If you don’t like black pudding, you can definitely sub in some white pudding or veggie pudding (Clonakilty do an unreal vegan pudding if you live in Ireland, I recommend checking it out.). Some grated apple is also a nice edition to this, but I had none so I added some grated cheese instead. One tip is to not overfill your pastry or it will be hard to roll. Less is more. This meal can be left cooking all day and you’ll have a hot dinner ready once you get in the door, with the lovely smell wafting through your house. This is the ultimate Irish comfort food. I am going to use my favourite method where I brown the meat and veg to take the bite out of the potatoes as I like them soft. This is totally optional though as I know lots of people prefer potatoes with a bit of a bite to them. I love serving this with a big bowl of creamy mash and some frozen peas. Ingredients Serves 4 | 560 calories per serving (excluding extra mash) 500g diced lamb 1 large onion, roughly diced 2 carrots, cut into rounds 2 celery, roughly chopped 3 medium potatoes, peeled &amp; quartered (depending on how big you like them, they will need longer in slow cooker if they are bigger) 1 400g tin chopped tomatoes 300ml red wine 300ml lamb or vegetable stock (I used 2 stock cubes) 1 tbsp garlic powder 1 tbsp dried rosemary 2 tbsp plain flour Some fresh parsley (to garnish) 1 tbsp butter (if browning the meat first) Method ***This step is optional*** If browning the meat, melt the butter in a skillet and brown the meat on all sides with the onion, until it has a nice colour (about 5 mins), set aside in a bowl. Once meat is separated add your remaining veg (celery, carrot &amp; potatoes) and steam with a lid on for 5-7mins. Place your meat and veg with all your other ingredients into the slow cooker. Give everything a good stir together and leave it on low for 6-8hrs or on high heat for 4. Garnish with some parsley before serving. I like to serve mine with some creamy mash and some cooked frozen peas.</image:caption>

      <image:caption>My name is Lara Battigelli and I am a twenty-something year old foodie with an obsession for cooking to get me out of any household chores! I found myself repeatedly typing out recipes every time someone asked me in-person or on Instagram, so after much deliberation I finally decided to just take the plunge and try build a repository for them here. I grew up in a house that was a complete blend of cuisines. My dad is half-Indian and half-Italian, so until I was in my teens, I never realised how different the food was that I ate on a day to day basis compared to some of my friends. I grew up around such a wide variety of food that my passion grew from there (so thanks Dad!!). I typically like to cook quick meals that are practical and tasty (I work a 9-6 full time job), using ingredients that can be found in any supermarket.
